Fabulous Chocolate Cookies (I Hope)

About fifteen years ago, I made some cookies from a recipe that was on the back of a cake mix box.  Then I threw that cake box away.  THEN, we tasted the cookies and realized that we needed that recipe back!

Alas, fifteen years passed.  Then my mom found the recipe again.  Or at least we think it is the recipe.  I haven’t tried making them yet.  But if these are the same cookies, you will want to know about it.

Chocolate Gooey Butter Cookies

8 oz cream cheese, room temp

1 stick butter, room temp

1 egg

1 tsp vanilla

1 box moist chocolate cake mix

Confectioners sugar, for dusting.

Cream the cream cheese and butter until smooth.  Beat in the egg.  Then beat in the vanilla.  Mix in cake mix.  Cover and refrigerate for 2 hour to firm up so that you can roll the batter into tablespoon sized  balls.  Then roll in confectioner’s sugar.  Bake on ungreased cookie sheet, 2 inches apart.  Bake 12 minutes at 350.    Cookies will remain soft and gooey.

I don’t actually have a cake mix, so I can’t try these until I get one.  (And I went grocery shopping yesterday, so it will be at least a week.  Blah.)  But to the best of my recollection, this sounds about right.  (Okay, I have no idea.  I remember adding stuff to a cake mix and I remember the powdered sugar.  But my mom tasted them and she thinks they are the same cookies.)
